  • 1 pkg. spaghetti sauce mix, traditional
  • 1-¾ c. water
  • 1 can (6 ounces) tomato paste
  • 1 tbsp. oil
  • 1 lb. boneless, skinless chicken breast, cut in 1/2-inch strips
  • 1 tsp. Ground Cumin Seed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1-½ c. frozen corn
  • 2 cans (4 ounces each) green chilies
  • 12 oz. small pasta OR spaghetti, cooked according to package directions


  • 18 tsp. pepper, red ground
  • 2 tbsp. fresh chopped cilantro


  1. Prepare spaghetti sauce mix with water and tomato paste according to package directions. Keep warm.
  2. Heat oil in skillet. Add chicken and stir-fry over medium high heat until meat is cooked through. Add the cooked chicken, cumin, black beans, corn, and chilies to the spaghetti sauce; mix. Heat through.
  3. Serve over hot pasta and sprinkle with ground red pepper and cilantro, if desired.
