  • 1 lb. potatoes (recommend baby reds or Yukon gold)
  • 2 green onions, sliced
  • ½ c. mayonnaise
  • ½ c. sliced stuffed green olives
  • ¼ c. diced celery
  • 2 tbsp. sour cream
  • 2 tsp. Beau Monde®
  • ¼ tsp. Fine Grind Black Pepper


  1. If using Yukon gold potatoes, peel prior to boiling. Baby red potatoes do not need to be peeled. Boil potatoes until tender when pierced with a fork, about 15 minutes. Drain and cool. Cube potatoes.
  2. Mix remaining ingredients in a large mixing bowl. Add the potatoes; stir or toss lightly to coat. Cover and chill a minimum of 6 hours to blend flavors.
  3. Serve on lettuce leaf.


If using Yukon Gold potatoes, 1 pound equals about 4 medium potatoes.
