  • 1 c. sliced peaches
  • 1 c. sugar
  • 1 c. cider vinegar
  • 1 ½ tsp. Tarragon


  1. Combine the peaches, sugar and rosemary. Cover with a kitchen towel, and let sit at room temperature for two days, stirring once a day. Strain the mixture, stir in vinegar to taste, and transfer to an airtight container. Store in the refrigerator.
