The outer peel of the lemon, commonly referred to as lemon zest, holds the highest amount of essential oils.

To get the best flavor, and avoid bitter undertones, we only use the thin outer layer of tree-ripened lemons for our Spice Islands® lemon peel. Its tart, citrus zing brightens baked goods, seafood, marinades and more.

Use it whenever a recipe calls for lemon zest, substituting equal amounts of dried lemon peel to fresh.
