| Ingredients |

3/4 cup shortening
|
|
1 cup sugar
|
|
1 egg
|
|
1/4 cup molasses
|
|
1/2 teaspoon Spice Islands Ground Ginger
|
|
1-1/2 teaspoon finely chopped Spice Islands Crystallized Ginger
|
|
2 teaspoons Spice Islands Ground Saigon Cinnamon
|
|
2 teaspoons baking soda
|
|
1/2 teaspoon salt
|
|
2-1/4 cups flour
|
|
1/4 cup sugar
|

| Directions |
Preheat oven to 350ºF.
Mix shortening, sugar, egg, and molasses, until just combined, using an electric mixer. Add ground and crystallized ginger, cinnamon, baking soda, salt, and flour. Mix.
Form dough into 1-inch balls; roll in sugar and place on ungreased baking sheet. Do not flatten.
Bake for 15 minutes. Remove from baking pan and cool on racks.
